Simple Wheat Bread Recipe
with Home-Milled Flour
This is our simple yeast dough recipe. We have found over the years that less is more when baking bread. There are many additions you can make to this recipe and we encourage you to try them. You can add lecithin, gluten, flax seed, and more. We just prefer the simple goodness of home-milled wheat without any frills.
If you are new to bread making you will find that it takes a little practice. There are many variables that make a difference in the density, texture, and taste. Fine tuning is part of the fun. Just enjoy the journey. Don’t worry, all homemade bread tastes good - even the mistakes.
Ingredients:
1 1/2 cups hot water
1/3 cup olive oil
1/3 cup honey
2 tsp. salt
1 egg
4 - 5 cups hard red wheat or hard white wheat
1 Tbs. yeast
Directions:
Combine water, oil, honey, salt, and egg. Add half of the flour and mix thoroughly. Add yeast and enough flour to make a soft dough. Knead dough until smooth and elastic (about 5-6 minutes). Let dough rise until it doubles in size. Pour dough onto an oiled or floured surface and reshape as desired. Let the dough rise again until doubled in size. For one 2 lb. loaf bake at 350° for about 40 minutes or until the internal temperature is 190°.
